Shimada noodles

Shimada noodles were named in reference to the Shimada hairstyle. The top of the noodle has the shape of a ring that promises happiness forever. The noodle is very elastic, chewy, and has the flavor of the flour. Udon, Kishimen, Hiyamugi soba, and somen are available.
