Tasting Notes | Mild and mellow Daiginjo Shizuku-shu Genshu made from Yamada Nishiki from Hyogo Prefecture (39% polishing ratio) and brewed with pure underground water from the Japanese Alps. The fermentation mash is carefully managed at a low temperature, and when the balance of flavor is right, the toji slowly squeezes the sake out of hanging bags by hand. Then, the sake is instantly heated to retain the intensity of the aroma. It is made with a great amount of time and effort. The flavor will be milder if the sake is stored in the refrigerator for a long period. Recommended for drinking chilled or at room temperature. Very aromatic and mellow.
