Tasting Notes | Shizuku-shu (drip press) with rich aroma Daiginjo-shu made from Yamada Nishiki from Hyogo Prefecture (39% polishing ratio) and brewed with pure underground water from the Japanese Alps. The fermentation mash is managed at a low temperature for a long period and when the balance of flavor is right, the toji slowly squeezes the sake out of hanging bags by hand. Then, the sake is instantly heated to retain the intensity of the aroma. Recommended for drinking chilled or at room temperature.
