Nama Genshu made from Yamada Nishiki from Hyogo Prefecture (39% polishing ratio) and brewed with pure underground water from the Japanese Alps.
The fermentation mash is managed at a low temperature for a long period and when the balance of flavor is right, the toji slowly squeezes the sake out of hanging bags by hand. Then, the Genshu is refrigerated without heating (Nama).
Highly recommended to drink chilled in a wine glass while enjoying the rich aroma.
