Daiginjo-shu made from Yamada Nishiki from Hyogo Prefecture (39% polishing ratio) and brewed with pure underground water from the Japanese Alps.
The fermentation mash is carefully managed at a low temperature, and when the balance of flavor is right, the toji slowly squeezes the sake out of hanging bags by hand. Then, the sake is instantly heated to retain the intensity of the aroma. It is made with a great amount of time and effort. Recommended for drinking chilled or at room temperature.
The fragrance is rich and mellow, we recommend tasting carefully in a single drink.
